Kale, Brassica oleracea acephala, is a loose-leafed edible plant derived from the cabbage family. Kale prefers growing conditions under 75 degrees F and can withstand very hard freezes. High summer temperatures reduce growth, decrease quality, and cause bitter or off-flavors to develop. Kale is hand-harvested via multiple passes through the same stand based on leaf size/maturity. They harvest lower leaves when they reach 8–10" in size.
FH Innovative Kale can have up to 50% yellowing leaves, which works well as a value-add process such as juicing.
