Grown for its succulent stalks or petioles, celery, Apium graveolens, dates as far back as 850 B.C. and was cultivated not for its culinary use, but for its medicinal purposes. In the United States, green stalk celery is the usual choice and is used both raw and cooked. Celery is a cool-season biennial that grows best from 60F to 65F, but it will tolerate temperatures from 45F to 75F.
