Squash, genus Cucurbita, is native to the New World, where native peoples cultivated them before European settlement. Winter Squash differs from summer squash in that they are harvested in a later stage when their seeds have matured fully and their skin has hardened into a tough rind. At this stage, most varieties of this vegetable can be stored for use during the winter.
