# Summer Squash

Squash, genus *Cucurbita, *is native to the New World, where native peoples cultivated them before European settlement. Summer squash are harvested when immature, while the rind is still tender and edible. Most summer squashes grow in bushes, and the name "summer squash" refers to the short storage life of these squashes, unlike the longer shelf life of winter squashes.
